The olives arriving at the mill must be intact and healthy, without damage. In addition, the time between harvesting and crushing should not exceed 12-24 hours, to avoid increased acidity and organoleptic defects. In order to obtain a quality oil, the crushing must be carried out quickly and at low temperatures.
