Quality of extra virgin olive oils
There are various qualities of olive oil, different in attributes and characteristics. For this reason, it is very important that the sales name is clearly stated on the label.

Here are the classifications and characteristics of each type of oil:

  1. Extra virgin olive oils: These oils are obtained only by mechanical processes. They are characterized by a fruity taste of olive and must not contain any defect.

  2. Virgin olive oil: Oils obtained only by mechanical or other physical processes and which have not undergone any treatment other than washing, decanting, centrifugation and filtration.

  3. Refined olive oils: These are obtained by refining virgin olive oil.

  4. Olive oils: composed of refined olive oils and virgin olive oils: They are oils obtained by cutting of refined olive oil with virgin olive oil.

  5. Olive-pomace oils: They are obtained from the olive pomace treated with solvents or by physical processes.

  6. Refined olive-pomace oils: They are obtained by refining raw olive-pomace oil.

  7. Olive-pomace oils: They are oils obtained from the cut of refined olive-pomace oil and virgin olive oil.
