Le Mole Oil Mill
All olives from the Ruvo facility are milled here, using cutting-edge processes fully managed through digital devices such as tablets and smartphones, allowing real-time monitoring and optimization of all operations.
The olives are harvested mechanically using an over-the-row harvester and immediately transported to the mill, where they are processed without any storage phase. This is made possible by large loading hoppers that can handle high input volumes, avoiding waiting times and preventing potential quality deterioration.

The mill is equipped with two extraction lines: one Pieralisi line, currently in operation, and one Mori-Tem line, which is still being installed. One of the key aspects in ensuring high-quality extra virgin olive oil is temperature control. For this purpose, cold technologies are used, which are essential for enhancing the aromatic components of the oil. The so-called “cold zone” is achieved through a combination of two technological solutions: crushers with cooling jackets, which chill the paste during crushing, and a Protoreactor®.
The oil mill is fully integrated with Industry 4.0 technologies. This integration optimizes performance and ensures consistent quality in the final product. Thanks to all these technological solutions, the result is a high-quality extra virgin olive oil, rich in both nutritional and sensory properties, capable of expressing distinct aromatic notes.
