Tuscania Olive Groves

This extra virgin olive oil is produced with great care in the volcanic hills of Tuscania, a unique area in the heart of Lazio. The oil comes from 110 hectares of land, with olive varieties including Maurino and Pendolino, cultivated across 70 hectares at high density—ensuring a rich and refined flavor.

The remaining 40 hectares are dedicated to Leccino and Canino varieties, planted intensively at 400 trees per hectare. All olive trees have an average age of 7 years, with production increasing steadily over time. The oil is produced following biodynamic methods and is Demeter certified, ensuring full respect for nature and the environment throughout the entire production process. It also holds the IGP Olio di Roma certification, a mark of quality that highlights the richness of Rome’s olive-growing tradition.



Olives are harvested mechanically: a straddle harvester is used for the high-density areas, while a trunk shaker with integrated net is used in the intensive groves. This method allows us to harvest olives at just the right time, preserving their quality and integrity.

The groves are planted in sandy soil, with minimal stone content but rich in macro- and micro-inorganic elements thanks to its volcanic origin. The soil contains a moderate level of organic matter, while the climate is generally characterized by mild winters and hot, dry summers. This combination of factors gives our oil a distinctive aromatic profile.
